Cassava cake

 

 There are many versions of this classic Philippine dessert on the net, so I've chosen the simplest!

Ingredients:
  • 1 tin of coconut milk (400 ml)
  • 2 packets of grated cassava (you may find this in stores which carry Asian products)
  • 2 eggs, beaten
  • 1 teaspoon of salt
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of lemon zest
  • 1 cup + 1 tablespoon of sugar
  • 2 tablespoons of melted butter or margarine.           Yummy!!!!
You will also need the following kitchen utensils:
  • A bowl
  • A chef's knife
  • A wire whisk
  • A baking dish
  • A silicone brush
  • A grater
Instructions

-First, preheat the oven to 350F.
-Crack and beat the eggs and mix all the ingredients, except the melted butter/margarine, in a bowl.
-Next, pour the mixture into a greased baking dish (9x13'') and bake at 350F for 45 minutes.
-Then, remove from the oven and brush melted butter on top of the cake and 
bake it for another 15 to 30 minutes until the edges are golden brown and a knife inserted in the centre of the cake comes out clean.
-Finally, let it cool down and and the cake is ready to be served. Enjoy!

Cassava Cake is soft, chewy and aromatic. If you have a sweet-tooth, this is your recipe.

Today is Shrove Tuesday

You might have heard about it. In fact, this day is also known as Pancake Day. It takes place forty-seven days before Easter. In past centuries, Lent was a time of fasting. Both meat and eggs were forbidden throughout six weeks. The tradition was to eat up all your meat on the Monday before Lent, and all your eggs on the Tuesday (in pancakes). Nowadays, the fasting has gone and the eating remains! There is a pancake tossing contest and pancake race in England as well. I know English pancakes are extraordinary wonderful but...I am not going to beat around the bush, I prefer them thicker. So, let's prepare delicious pancakes following the instructions below. The video is very helpful. Enjoy!

A wink at Canadian traditions


As it's next in time, I'd like to take the chance to remember one of the most significant festivities in Canada from this blog, Thanksgiving!

Thanksgiving is held on the second Monday of October in Canada to celebrate the close of the harvest season.
The Canadian Thanksgiving Day came about because of a combination of traditions. Before the first Europeans arrived in North America, the farmers in Europe held celebrations at harvest time. The farm workers filled a curved goat's horn with fruit and grain to give thanks for their harvest having been a good one. This horn was called Horn of Plenty, and the farmers who arrived in Canada to start a new life took this tradition with them.
In Newfoundland, in 1578, the English navigator Martin Frobisher held a ceremony to thank their survival after the long journey.
Since then, Thanksgiving is the best occasion to share with the family and the beloved ones the joy of being grateful to life. In Canada, there is not an exception!! Canadians are welcoming hosts and they enjoy this date with plenty of food; you can also try one of them following this delicious traditional recipe. Bon appétit!
